What are Wild by Tart’s ambitions for 2021?
We are looking forward to reopening – and hopefully staying open this time! We hope that events will soon be back in full swing and we are excited to continue to grow our Wild Store and feature more beautiful gifts and home products.

As we’re in lockdown three, do you have any tips for keeping our readers’ rotation of recipes fun, healthy and not too complicated?
At this time of year it’s all about warming bowl food, full of lots of love and flavour to hold us tight during this time. We love fragrant healing broths, slow-cooked hearty dishes and tantalising spicy numbers to shake things up and make us feel alive.

What is the best piece of advice you have ever been given in your career and why?
Go with your gut and don’t let anyone try and change your path. Keep strong through the hard times and appreciate the good times!

Who is your role model and how have they influenced you in your work?
We have so many. Chef wise, it has to be Skye Gyngell. She cooks with such respect for her produce and plates up beautifully. To us her dishes are pretty much perfection. Her partnership with Fern Verrow is inspiring as well – all stemming from her passion for biodynamic produce.

What ingredient can you not live without?
That’s a really tough one but we’d have to say garlic, olive oil and chilli.

Where is your favourite place to eat in London?
It’s between Towpath Café and The River Café. Great views and food.

What do you like to do on a day off?
A long walk in the countryside – taking in nature.

Apart from food, what are your biggest passions?
Wild swimming. It’s the ultimate connection to nature. We’re constantly discovering new spots.

What is one positive you learned in 2020 that you will carry through into 2021?
The importance of stepping back from work and spending time with your family.

If you could choose anyone from today or history, who would be your ideal dinner party guest and why?
A young Henry VII – so handsome, charismatic, powerful, and revolutionary in his thinking. He was pivotal in English history.
