The head chef of Yosma discloses to Brummell his best piece of advice, his passions, who he looks up to most and the restaurant you should try next

What is the best piece of advice you have ever been given in your career and why? 

Perseverance, passion, patience. Focus and work hard on the three Ps, and it will come. There are no shortcuts to success.

Who is your role model?

Jamie Oliver. He has brought about significant positive change to the perception of food in our lives, and continues to campaign. Food revolution, school dinners, sustainable farming, animal welfare to name a few. Jamie has made cooking at home accessible, and cool.

What ingredient can you not live without?

Good extra virgin olive oil.

What item, apart from your passport, can you not travel without?

Phone. (Unfortunately) Toothbrush?

Where is your favourite place to eat in London?

I have never had a bad meal at Barrafina.

What do you like to do on a day off?

Spend time with the family, which usually revolves around the kids’ activities and eating.

Apart from food, what are your biggest passions?

Football. Tottenham Hotspurs in particular.

If you could choose anyone from today or history, who would be your ideal dinner party guest and why?

Bob Marley, Salvador Dali and Gandhi. Is that too many?
