What is the best piece of advice you have ever been given in your career?

Find a position in a company that you aspire to work for and work as hard as you can.

Who is your role model and how have they influenced you in your work?

My father. He has instilled a work ethic in me.

What ingredient can you not live without and why?

Olive oil. I can’t do without it, from cooking to salad dressing.

What item, apart from your passport, can you not travel without?

Earphones. I am always listening to music.

Where is your favourite place to eat in London?

Apart from Chucs, there are too many to mention but most recently, a restaurant that has become a favourite is Bocca di Lupo – I love the authenticity and regionality; it really showcases the variances in Italian cooking. I also love A Wong, Kiln and Jean-Georges at The Connaught.

What do you like to do on a day off?

I love to cook, watch rugby and Formula One and go on family walks with my wife, our two boys and our dog.

Apart from food and hospitality, what are your biggest passions

Vintage motorbikes and travel. Preferably together.

If you could choose anyone from today or history, who would be your ideal dinner party guest and why?

Christopher Hitchens, an incredibly interesting man.
