Since the Anantara Palazzo Naiadi Rome was acquired by the luxury Thai hotel group, the hotel has been gradually changing to align with its upmarket portfolio. The latest jewel in the palatial establishment’s crown is the new Ineo restaurant. Here, celebrated chef Heros De Agostinis brings his culinary journey full circle. Born in Rome, De Agostinis honed his craft in many fine dining establishments, most notably The Ritz-Carlton Bahrain and London’s The Lanesborough, where he earned a Michelin star. Ineo – from the Latin for “new beginning” – signifies an exciting new chapter and is a chic, contemporary affair with unique and playful dishes, such as raw Sicilian prawns with mandarin ceviche, and black cod saltimbocca, a twist on a Roman favourite.
