The London restaurants bringing sustainability to the fore
’Tis the season for several London restaurants to launch their charitable initiatives: Mare, Core and Scully are among a host of London restaurants adding a voluntary £1 to bills for homeless charity StreetSmart, and Oklava, SomSaa and Lyle’s will be doing the same for Switchback – a rehabilitation programme for young prison-leavers. Elsewhere, Adam Handling recently opened his sustainable restaurant Ugly Butterfly in Chelsea in collaboration with Cadogan, Quintessentially Foundation and The Felix Project, which collects surplus food to help feed vulnerable people. As well as creating delicious dishes from ingredients usually discarded as waste, Ugly Butterfly will host talks with pioneers of sustainability, creating a hub for community sustainability initiatives.
