Every day is a school day, but in this class, you are handed a G&T on arrival, and you graduate carrying a bottle of the botanical spirit you distilled yourself. The seat of learning is the new London Bridge Distillery School, below The Whisky Exchange on Borough High Street, and using that welcome gin as your base-spirit starting point, you develop your own botanical profile – citrus-forward or spicier; more aromatic or drier – under expert guidance (maybe don’t overdo the cardamom, for example). You then distil it in copper mini-stills, while learning about the history of the spirit. They even store the recipe so you can order more of your “gindividual” creation. The school also offers whisky- and rum-blending masterclasses.
