What is the best piece of advice you have ever been given in your career?

Aim for the stars, fall in the sky. It’s an attitude about everything – it enables you to be successful, or at least try to be.

Who is your role model?

My brother – his values, his friendship and his business acumen.

What ingredient can you not live without?

Olive oil (and tomatoes).

What item, apart from your passport, can you not travel without?

My drone (and my wife).

Where is your favourite place to eat in London?

The Barbary, Bocca di Luppo or Defune.

What do you like to do on a day off?

Eat, sleep and work out.

Apart from food, what are your biggest passions?

Kitesurfing, basketball and my family.

If you could choose anyone from today or history, who would be your ideal dinner party guest?

Anthony Bourdain. He is a legend.
